Authentic Crispy Swiss Sweet Potato Rosti
A fine balance of sweet and savory, this Sweet Potato Rosti is a beautiful and healthful addition to any meal. Ingredients
- 2 large sweet potatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon of salt
- 1⁄2 teaspoon of black pepper
- 2 tbls of all-purpose flour
- 2 eggs
- 4 tbls of olive oil
- Sour cream and green onions, to garnish

Directions
Start by peeling the sweet potatoes and grate them using a coarse grater.
Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
In a large bowl, mix the grated sweet potatoes, finely chopped onion, minced garlic, salt, pepper, all-purpose flour, and eggs until everything is well combined.
Heat the olive oil in a large pan over medium heat.
Divide the sweet potato mixture into 4 equal parts and shape each into a patty.
Fry each patty in the pan for about 5-7 minutes on each side, until golden brown and crispy.
Once all patties are fried, let them rest on a paper towel to absorb any extra oil.
Serve the sweet potato rosti warm, garnished with a dollop of sour cream and some chopped green onions.
