Authentic Egyptian Dukkah Spice Blend

Ingredients
- 1⁄2 Cup hazelnuts
- 1⁄4 Cup sesame seeds
- 2 tbls Coriander Seeds
- 2 tbls cumin seeds
- 1 tablespoon black peppercorns
- 1 teaspoon sea salt
- 1⁄2 teaspoon paprika (optional)

Directions
Heat a dry pan on medium heat and add hazelnuts. Toast them until lightly golden and fragrant, occasionally stirring to ensure toasting. Remove from heat and let cool.
In the same pan, add the sesame seeds and toast them until they turn golden and start to pop. Stir constantly, then remove from heat and cool.
On a small pan, toast the coriander seeds, cumin seeds, and black peppercorns.
Using a mortar and pestle grind the hazelnuts. Transfer to a bowl.
5.Grind the sesame seeds in the mortar and pestle until crushed. Add them to the bowl with the hazelnuts.
Grind the toasted coriander, seeds, and peppercorns until fine. Add the mixture to the bowl.
Season the mixture with sea salt and paprika (optional). Mix well to combine all the ingredients evenly.
