- 1 tablespoon olive oil
- 1 chopped onion
- 3 cloves garlic
- fresh ginger
- 1⁄2 teaspoon cumin powder
- 1⁄2 teaspoon turmirc powder
- 1⁄2 teaspoon coriander powder
- 1 teaspoon curry powder
- 1 teaspoon garam masala powder
- 1 can chopped tomatoes
- 11⁄2 cups red split lentils
- 2 cups vegetable stock cube
- 1 can coconut milk

Begin by heating oil in a saucepan. Add onions, garlic, and ginger and sauté until the onion becomes translucent and soft.

Add all the spices and cook for about 30 seconds.

Add the chopped tomatoes, lentils, vegetable broth, and 3/4 of the coconut milk. Season with a pinch of salt.

Bring the mixture to a boil, then reduce the heat and let it simmer without a lid on low heat for 15 minutes or until the lentils become soft and the dahl has a creamy texture.
