- 21⁄2 spoon unflavoured gelatine
- 4 tablespoon crystal sugar
- 1 spoon vanilla essence
- 2 cups berries

Place the unflavoured gelatine in a bowl and hydrate with water.

In a saucepan, heat the cream with the sugar until it dissolves. When it starts to boil, turn off the heat. Add the hydrated gelatine, and the vanilla and leave to cool.

Serve in the container of your choice Serve and leave in the refrigerator for about 2 hours or until the panna cotta is firm.

For the red fruit sauce, put the berries in a frying pan with the cup of sugar, cook for a few minutes, set aside and leave to cool.
