Awesome Carrot Cake with Cream Cheese Frosting

For the Cake:
- 2 cups crystal sugar
- 4 eggs
- 1 Cup vegetable oil
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 2 cups grated carrot
- 1 Cup crushed pineapple, drained
- 1⁄2 Cup chopped walnuts
For the Frosting:
- 1⁄2 Cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- 2 teaspoons pure vanilla extract

Directions
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix together the sugar, eggs, and oil until smooth. Stir in the flour, baking soda, salt, and cinnamon. Mix in the carrots, drained pineapple, and walnuts.
Pour the batter into the prepared baking pan. Bake for 40-50 minutes or until a toothpick inserted into the center comes out cleanly. Allow the cake to cool completely.
For the frosting, in a medium bowl, beat the butter and cream cheese until smooth. Gradually add the powdered sugar and continue to beat until the frosting is creamy. Stir in the vanilla extract.
Once the cake is cooled, spread the cream cheese frosting on top. Slice and serve.
