Baked Miniature Christmas Plum Puddings
These puddings' yields are bite-sized, meaning they're perfect for satisfying your sweet tooth without making you feel too full.

- 1 Cup of chopped dried plums
- 2 cups of mixed dried fruits
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- 1 apple, shredded
- 1 Cup of dark brown sugar
- 1⁄2 Cup of butter, melted
- 1⁄4 Cup of brandy
- 2 large eggs
- 1 Cup of self-rising flour
- 1 Cup of breadcrumbs
- 2 teaspoon of mixed spice
- Clotted cream or ice cream to serve (optional)

In a large bowl, mix the chopped dried plums, mixed dried fruits, citrus zests, citrus juices, shredded apple and set aside. The diverse flavors of these fruits will truly compliment the taste of your pudding - a sure hit for gatherings or just for an ordinary Christmas dinner.
Stir in the brown sugar followed by the melted butter and brandy. Mix thoroughly until more or less evenly distributed. The brandy adds a distinct taste, so make sure not to skip this important ingredient!
Beat the eggs in a separate bowl then add this to the fruit mixture. Stir well until all the ingredients are combined.
Now add the self-rising flour, breadcrumbs, and mixed spice to your mixture. Stir them in gradually to ensure the mixture is well-blended. If you're finding it too dry, you could add another egg or a splash more brandy - remember, the consistency should be moist but not too wet.
Grease 24 holes of a mini muffin tin and spoon the mixture in, ensuring it's evenly distributed. Use the back of the spoon to press down the mixture. This compacts the mash so that the puddings hold their shape when baked.
Bake in a preheated oven at 320°F for about 25 minutes, or until the puddings are firm and a skewer comes out clean.
Let the puddings cool in the tin for around 10 minutes before transferring them onto a wire rack to finish cooling.
Serve these adorable miniature plum puddings with a dollop of clotted cream or topped with a scoop of ice cream - or both if you fancy!
