Best Grilled Portobello Mushroom Burger

Ingredients
- 4 Portobello mushroom caps
- 2 tbls of olive oil
- Salt and pepper, to taste
- 4 slices of Provolone cheese
- 4 whole-wheat hamburger buns
- Fresh lettuce leaves
- sliced tomato
- sliced red onion
- 1⁄4 Cup of mayonnaise
- 2 tbls of Dijon Mustard

Preheat your grill to medium-high heat.
Clean the mushroom caps by removing the stem and scraping out the gills using a spoon, then brush them with olive oil on both sides. Season with salt and pepper.
Place the mushrooms on the hot grill, gill side down initially. Grill for about 5-7 minutes per side, or until they’re tender.
Shortly before they're done, lay a slice of Provolone cheese on each mushroom and let it melt. At the same time, toast the hamburger buns on the grill.
To assemble the burgers, spread a layer of mayonnaise and Dijon mustard on the insides of the buns. Then place the grilled mushrooms on the bottom half, topped with lettuce, tomato, and onion.
Set the bun tops in place and serve immediately, with extra napkins on the side.
