Best Homemade Soft Potato Buns

- 1 Cup warm milk
- 1⁄3 Cup sugar
- 6 potatoes, mashed
- 1⁄4 Cup unsalted butter, melted
- 2 eggs, beaten
- 5 cups all-purpose flour
- 11⁄2 teaspoons salt

Directions
In a large mixing bowl, dissolve the sugar in warm milk. Sprinkle the yeast over the milk mixture and let it sit for a few minutes, or until it becomes frothy.
Add mashed potatoes, melted butter, and beaten eggs to the yeast mixture. Mix well to combine.
In another bowl, mix together the flour and salt. Add the flour mixture to the potato mixture, stirring with a wooden spoon until a soft dough forms.
Turn dough out onto a floured surface and knead, until it becomes smooth and elastic.
Shape the dough into a ball and place it in a greased bowl, turning once to coat the dough with oil. Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
Preheat oven to 375°F (180°C). Line a baking tray with parchment paper.
Punch down the risen dough and move onto a lightly floured surface. Divide the dough into 8 equal portions and shape each portion into a ball.
Put the dough balls on the prepared baking, leaving some space between them. Cover with a kitchen towel and let them rise for another 30 minutes
Brush the risen buns with beaten egg and sprinkle sesame seeds on top if desired.
Bake the buns in the preheated oven for 15-18 minutes, or until they turn golden brown. Remove from the oven and transfer to a wire rack to cool. Slic the potato buns horizontally and use them to make delicious sandwiches, burgers, or enjoy them as a side dish!
