This delicious Vegetarian Pesto Pasta is a wholesome meal packed with flavors from fresh basil, parmesan cheese and pine nuts. This simple yet scrumptious dish that can be whipped up in just 30 minutes is perfect for a quick lunch or a casual dinner.
Ingredients
- 2 cups of pasta (your choice)
- 1 Cup fresh basil leaves
- 2 cloves garlic
- 1⁄4 Cup pine nuts
- 1⁄4 Cup parmesan
- 1⁄2 Cup olive oil
- salt and pepper to taste
- 1 Cup diced cherry tomatoes
- Shredded parmesan for garnish

Directions
Cook the pasta according to the package instructions until it is al dente. Once done, drain it and set aside.
While the pasta is cooking, prepare the pesto by combining the basil leaves, garlic, pine nuts, grated parmesan, olive oil, salt, and pepper in a food processor. Blend until smooth.
Heat large pan with a little oil and add the cooked pasta.
