Broccoli Soup with Coconut Milk
Excellent warm broccoli soup with a heart of coconut milk, which is not only healthy but also tasty.

- 1 pcs broccoli
- 400 ml coconut milk
- 2 pcs onion
- 2 kl grated ginger
- 2 kl olive oil
- 1⁄2 l chicken broth
- 1 kl salt
- 1 kl ground black pepper

1. Step
Wash and cut the broccoli into smaller pieces. Peel and chop the onion and ginger finely.
2. Step
Heat the olive oil in a pan and sauté the onion with ginger until the onion is translucent.
3. Step
Add the chopped broccoli and sauté for another 5 minutes. Then add the chicken broth and let it simmer on medium heat for approximately 15 minutes, until the broccoli is soft.
4. Step
Add coconut milk, salt, and pepper to the soup. Blend everything together with a hand blender until a creamy consistency is formed. If the soup is too thick, you can add a little water or broth.
