Carrot Almond Cake without Flour
An excellent carrot almond cake without flour that you will enjoy with coffee or tea.
Ingredients
- 3 whole Big carrots
- 200 grams Almonds
- 4 pcs large eggs
- 200 grams sugar
- 1 teaspoon Vanilla extract
- 2 teaspoons baking powder
- confectionery sugar

Directions
Preheat the oven to 180°C. Peel and grate the carrots. Blend the almonds finely.
Separate the whites from the yolks. Mix the yolk with sugar and vanilla extract until frothy. Then add grated carrots and almonds and mix. Beat the whites into a stiff snow and then carefully mix in.
Pour the mixture into a greased mold and let it bake in the oven for about 50 minutes.
Sprinkle it with powdered sugar after it cools down.
