- 150 g Smooth spelt flour
- 1⁄2 packages baking soda
- 250 g finely grated carrots
- a few drops vanilla aroma
- 80 g Roughly chopped nuts
- 60 g butter
- pinch ground ginger
- 1⁄3 ts ground cinnamon
- 2 egg
- 1 tablespoon Dried raisins soaked in tea
- 200 ml sour cream
- 50 g cream cheese
- 1 tablespoon confectionery sugar
- 1⁄2 package vanilla sugar

1. Step
We put the dry ingredients into a bowl and mix them with a spoon. (flour, baking powder, ginger and cinnamon)
2. Step
Add the melted butter and eggs. Then mix in the grated carrot, chopped nuts, raisins, and a few drops of vanilla essence.
3. Step
Line a 20x20 pan with paper, spread the batter evenly, and bake for about 30 minutes at 180 C. After baking, let it cool completely and apply the cream layer.
4. Step
Mix sour cream with cream cheese, powdered and vanilla sugar. Let it harden in the fridge for a few hours. We can decorate it with chopped nuts or fruits.
