Carrot - poppy seed cake
Recipe for a healthy carrot-poppy seed cake, which goes well with coffee or tea.

- 3 pcs carrots
- 200 g ground poppy seeds
- 200 g Plain flour
- 200 g sugar
- 200 ml milk
- 100 g butter
- 4 pcs Eggs
- 1 teaspoon baking powder
- 1 teaspoon Vanilla extract
- pinch of salt

1. Step
Start by grating your carrots and soaking your poppy seeds in milk. This is a key step in my opinion as it will add just the right flavours to the cake.
2. Step
Beat the butter with the sugar until foamy. Then add the eggs, one at a time, and beat thoroughly.
3. Step
Slowly add the flour mixed with baking powder and salt.
4. Step
Add the poppy seeds, carrots and vanilla extract and mix thoroughly.
5. Step
Pour the batter onto a baking tray lined with baking paper and bake the poppy seed cake with carrots in a preheated oven at 180 degrees Celsius for approximately 45 minutes.
6. Step
Let the cake cool completely before you cut it.
