Celery Broccoli Cream Soup

A simple yet tasty and nutritious soup, which is a perfect choice for cold winter days or a light lunch at any time. The celery and broccoli not only pair well together, but are also healthy. Surprisingly easy to make and it will definitely become everyone's favorite.

  • 2 tbsp olive oil Added to
  • 112 l vegetable broth Added to
  • 200 ml heavy cream Added to

1. Step

Wash the zucchini and broccoli, then cut them into small pieces. Mince the garlic and onion as well.

2. Step

In a large pot, heat the olive oil, then add the chopped onion and garlic. Sauté them until the onion becomes translucent.

3. Step

Then add the chopped celery and broccoli, and pour over the vegetable broth. Cook for about 20-25 minutes, until the celery and broccoli soften.

4. Step

Once the vegetables are tender, remove the pot from the heat. Puree the soup with a hand blender, then add the cream and salt, pepper to taste.

5. Step

Put the pot back on the fire and cook for another 5 minutes, then remove it from the fire. Let it stand for 5-10 minutes to let the flavors blend.

6. Step

Serve it hot, with fresh, crispy baguette or toast. Bon appetit!
