Directions
We blend the biscuits. Add room temperature butter and blend again. Pour into the bottom of a round baking tray (24cm) lined with baking paper and press onto the bottom. Bake in an oven preheated to 180 degrees for 7-10 minutes.
Briefly whip the curd, mascarpone and cream. Gradually whisk in the eggs, pudding powder and sugar, and mix everything to combine all the ingredients. Pour the cream onto the pre-baked crust and bake at a temperature of 155 degrees for about an hour. When baking cheesecake, I put a tray with water on the bottom of the oven. After baking, let the cheesecake cool in a slightly open oven for at least half an hour before removing it from the oven.
We cook the fruit with a sweetener. Then we blend it. We stir the golden grain in water and add it to the fruit puree. We keep stirring while cooking until thickened.
Spread the prepared glaze evenly over the cooled cheesecake. Leave it in the fridge overnight.
