Christmas fish soup
I have prepared this recipe for Christmas fish soup countless times, it is a traditional and essential part of our Christmas holidays.

- 1 kg Fish heads and bones
- 2 a piece carrots
- 2 a piece Parsley
- 1 a piece onion
- 3 zrnka peppers
- 3 a piece cloves
- bay leaf
- 100 ml white wine
- salt
- 2 l Waters

1. Step
Wash the fish heads and bones thoroughly and place in a large pot.
2. Step
Add peeled and chopped carrots and parsley, onion, pepper, cloves, bay leaf, salt and water. Cover and allow to cook slowly for about 1½ hours.
3. Step
Then strain the stock through a fine sieve and return to a clean pot.
4. Step
Add the white wine and stir. I prefer a semi-dry wine here, but I let the soup boil to let the alcohol from the wine evaporate. This way the soup has a smoother and more refined flavor.
5. Step
Christmas fish soup is ready, just serve it. You can season it with salt to taste.
