Classic Vegetable Red Lentil Soup
Lentil Soup is a hearty and nutritious dish that is perfect for cold days or when you need a quick and healthy meal. Packed with protein and fiber, this soup is deliciously satisfying and easy to make.
Ingredients
- 1 Cup red lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 Stems celery, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon turmeric
- salt and pepper to taste
- Fresh parsley, chopped ( garnish)
- Olive oil for cooking

Directions
In a large pot, heat oil. Add onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables are tender.
Add vegetable broth, cumin, paprika, turmeric, salt and pepper to the pot. Stir well.
Bring the mixture to boil, then reduce heat to low. Cover the pot and let it simmer for about 30-35 minutes. Stir occasionally.
Use an immersion blender to blend until mostly smooth, but still leaving some texture.
Taste and adjust the seasonings, adding more salt or pepper if needed.
Serve the Lentil Soup in bowls and garnish with freshly chopped parsley.
