Creamy broccoli soup with cheese
Quick broccoli soup with cheese. The fantastic taste of broccoli combined with the bold cheese is simply irresistible.

- 1 pcs broccoli
- 1 pcs onion
- 3 cloves garlic
- 200 g grated cheese
- 2 spoons butter
- 11⁄2 l Water or vegetable broth
- Salt, black pepper

1. Step
Clean the onion and garlic and chop finely. I clean the broccoli and cut it into smaller florets.
2. Step
In a saucepan, melt the butter and add the onion and garlic. I sauté them for a while.
3. Step
Then I add the broccoli and sauté it with the onion and garlic for about 5 more minutes.
4. Step
Then I add water or vegetable stock and cook the soup until the broccoli is tender. This is important, soft broccoli will blend better to a creamy consistency.
5. Step
Blend the soup until smooth and add grated cheese. Stir well until the cheese is completely melted.
6. Step
At the end I season the soup with salt and black pepper as needed.
