Crème brûlée au thermomix
I have been making the recipe for crème brûlée for years with my trusty friend, the Thermomix. The result is always consistent and delicious. The smooth, creamy texture, the crunchy caramel crust and the simple but classic flavors make this dessert one of my favorites.
Ingredients

- 100 g Sugar and extra for caramelizing
- One vanilla pod
- 500 g cream

To make creme brulee, place the egg yolks and sugar in the Thermomix and mix for 20 seconds on speed 3. I have found that this is the perfect setting to get a smooth, homogeneous mixture.
Cut the vanilla pod lengthwise and scrape out the seeds. Add the vanilla pod and seeds to the Thermomix together with the cream. Set the Thermomix to 10 minutes, 80 degrees and speed 2. This setting gives the cream its full vanilla flavor and at the same time mixes it well with the egg yolks and sugar.
Once the mixture is ready, remove the vanilla pod. Divide the mixture into four crème brûlée dishes. Leave to cool and then place in the fridge for at least two hours (or overnight). This resting time is essential for the crème brûlée to reach the perfect consistency.
Before serving, sprinkle each crème brûlée evenly with sugar and caramelize with a Bunsen burner. Caution: Keep the burner moving to prevent the sugar from burning until it forms a nice golden crust. Leave the crème brûlée to rest for a few minutes until the sugar crust hardens before serving.
