Crispy purple potato fries
Check out this fun and healthy alternative to classic fries! Purple potatoes are full of antioxidants and have a very interesting taste. They will add a bold colour and crunch to your fries.

- 1 kg purple potatoes
- 3 spoons olive oil
- salt
- freshly ground black pepper

Preheat the oven to 200 °C.
Wash and dry the potatoes thoroughly. You do not need to peel them as long as they are well washed. Then cut them into fries in the size of your choice.
Spread baking paper on a baking sheet.
Toss the potatoes with olive oil, salt and pepper.
Spread the potatoes out on the baking sheet in a single layer so they bake evenly.
Bake the purple fries in the oven for about 20-30 minutes, or until crispy. About halfway through, stir them.
