Delicious apple crumble muffins with peanuts
This recipe for apple muffins is one of my favorite fall recipes. The muffins are extremely tasty - the perfect mix of sweet and sour flavors with a crunchy topping on top.
Ingredients
- 2 Cups flour
- 2 Teaspoon baking soda
- 1 Pinch salt
- 1 Teaspoon cinnamon
- ½ cup butter
- 1 Cup sugar
- 2 large Eggs
- 1 Teaspoon pure vanilla extract
- 1⁄2 Cup buttermilk
- 2 apple
- 1 Handful Peanuts
- Grated coconut for sprinkling

Directions
Preheat the oven to 190 degrees and line a muffin tray with muffin tins.
In a medium bowl, whisk together the flour, baking powder, salt and cinnamon.
In a large bowl, beat the butter and sugar until light and fluffy. Then add the eggs and vanilla extract and mix well.
Gradually fold the dry ingredients into the butter mixture, alternating with the buttermilk.
My recommendation. The rule here is: less is more - mixing for too long can make the muffins too hard!
Peel the apples, remove the cores and cut them into small pieces. Fold the apple pieces into the batter. Pour the batter into 3/4 of the muffin cases.
In another bowl, crumble the butter, sugar, breadcrumbs and shelled peanuts with your hands. Sprinkle this mixture evenly over the batter in the muffin tins.
Bake the apple crumble muffins with peanuts in the preheated oven for 20-25 minutes. Sprinkle with shredded coconut before serving.
