Directions
To begin, dissolve the fresh yeast in the warm milk. The heat of the milk will help activate the yeast so that our Babka will rise. In a large bowl, mix the flour, sugar, eggs and butter. Gradually add the leavened milk, mixing constantly until a homogeneous dough is obtained.
To achieve a smooth and elastic texture, knead the mixture for 10-15 minutes. It may seem sticky at first, but with persistence it will become more manageable. Then let the dough rest in a bowl covered with a damp cloth for about 2 hours until it doubles in size.
While the dough is resting, you can prepare the chocolate filling. Melt the butter and chocolate in a double boiler until smooth and shiny.
Once the dough has risen, roll it out on a lightly floured surface into a rectangle. Spread the chocolate filling evenly. Here comes one of my favorite parts: roll the dough like a log, then cut the log in half lengthwise. Interlock the two parts, keeping the cut side up so the filling shows through.
Place the Babka in a buttered loaf pan, brush it with egg and let it rest for about 30 minutes. Preheat the oven to 180°C and bake for 30-35 minutes. You will know it is ready when it is golden brown and smells deliciously of chocolate and fresh bread.
To finish, let the Babka cool and sprinkle with powdered sugar to decorate, and that's it! Now you can enjoy your delicious chocolate Babka.
