Directions
Preheat the oven to 180°C. This step is essential for the toasted almonds to acquire a perfect consistency and flavor.
Toast the almonds in the oven for about 10 minutes. Be careful not to burn them, otherwise, it may affect the flavor of the nougat.
Grind the almonds until you get a coarse texture, a kind of sandy texture. In my experience, this consistency adds a lot to the crunchiness of the nougat.
In a saucepan over medium heat, melt the butter and add the sugar and honey. Stir until you obtain a homogeneous paste.
Add the lemon zest and cinnamon, ingredients that add a delicious aroma and flavor to the mixture.
Add the crushed almonds and stir well to integrate with the other ingredients.
In a mold previously lined with wafers, pour the almond mixture. It is important to press the dough so that it is compact and does not crumble when it is ready to be cut.
Finally, cover with more wafers and let cool for about 4 hours.
Once cold, cut the nougat into portions and enjoy.
This nougat keeps perfectly for weeks and is a perfect Christmas gift for our loved ones.
