Delicious mango Parfait
A delicious mango parfait that I prepared last summer during a very hot afternoon. The sweet and fresh flavor of the mango, along with the touch of honey and Greek yogurt, create a perfect combination to enjoy at any time of the day.
Ingredients
- 2 Large ripe Mangoes
- 250 g white Greek yogurt
- 3 cdas With
- 200 g Granola
- Strawberries or red fruits for garnish (optional)

Start by peeling the two mangoes, making sure to do it carefully and on a plate or bowl so as not to lose too much juice in this process. It is necessary that the mango is well ripe to get that soft texture and that characteristic sweet flavor that gives the parfait its special touch.
Once peeled, cut the mangoes into chunks and add them to the blender along with the Greek yogurt and the three tablespoons of honey. Blend everything until you obtain a smooth and homogeneous cream. If you find that the mixture is too thick, you can add a little milk or water, although I personally prefer it to be thick so that the parfait has more body.
Next, take 4 glasses or cups and add a layer of granola to the bottom of each one. This will be the base of our parfait, and will give it a delicious crunchy touch.
After the granola layer, add a layer of the mango-yogurt mixture. Be sure to add it carefully so it doesn't mix with the granola.
Add another layer of granola and then another layer of mango-yogurt mixture until you reach the rim of the glass. Remember to keep alternating the layers until the glass is full, always ending with the mango-yogurt mixture.
Repeat the process with the other glasses and then leave them in the refrigerator for at least 4 hours to set and cool well.
To serve, you can decorate with strawberries or red fruits on top. I love this presentation because it gives a touch of color and freshness to the dessert.
