- 1 onion

- 1 cup of white wine

Start by cleaning the mushrooms and cutting them into not too small pieces. Peel the shrimp and set aside.
In a large casserole, add a drizzle of olive oil and brown the shrimp. Remove and set aside.
In the same oil, add the finely chopped onion and garlic. When they are golden brown, add the mushrooms and sauté for a few minutes.
Add the rice and mix well so that it is impregnated with the flavor of the mushrooms and onion. Then add the white wine and let it evaporate.
Start adding the hot fish stock little by little, stirring constantly. The process of adding broth and stirring should continue until the rice is done.
When the rice is almost ready, add the shrimp and grated Parmesan cheese and mix well until it melts with the rice.
