Delightful Vegetable Lasagna
This delicious and nutritious vegetable lasagna is perfect for vegetarians or anyone looking for a healthier take on classic lasagna.
Ingredients
- 1 box lasagna noodles
- 1 container marinara sauce
- 2 cups Ricotta cheese
- 1 Cup cheese
- 1⁄2 Cup shredded parmesan cheese
- 1 Cup chopped spinach
- 1 Cup chopped zucchini
- 1 Cup chopped yellow squash
- 1⁄2 Cup chopped onion
- 2 cloves garlic
- 1 Cup mozzarella cheese
- 1⁄2 teaspoon dried oregano
- salt and pepper to taste

Directions
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions. Set aside.
In a large skillet over medium heat, sauté the onion and garlic until fragrant.
Add the zucchini and yellow squash to the skillet, and cook for 5-7 minutes, or until tender. Stir in the spinach and cook for an additional 2-3 minutes. Season with oregano, salt, and pepper. Set aside.
In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the parmesan cheese.
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Add a layer of cooked lasagna noodles, topped with a layer of the ricotta cheese mixture. Spread the vegetable mixture over the cheese layer and cover with more sauce until you have used up all the ingredients. End with a layer of sauce on top of the lasagna.
Cover the baking dish with foil and bake in the preheated oven for 20-30 minutes.
Take the foil off and sprinkle the remaining mozzarella and parmesan cheese on top. Bake the lasagna for another 10-15 minutes or until the cheese is bubbly and golden Take out of the oven and let it cool for a feminutes before serving.
