Ingredients
- 2 tbls vegetable oil
- 2 tbls red curry paste
- 1 can coconut milk
- 1 Cup broth
- 1 lb boneless, skinless chicken breasts thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 Cup sliced bamboo shoots
- 1 Cup sliced mushrooms
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1⁄4 Cup fresh basil leaves, torn
- steamed rice, for serving

Directions
Heat the vegetable oil in a large pan over medium heat. Add the red curry paste and fry for about a minute until fragrant.
Pour in the coconut milk and chicken broth. Stir well to combine and bring the mixture to a simmer.
Add chicken slices to the pan and cook for about 5 minutes.
Stir in the red and green bell peppers, bamboo shoots, and mushrooms. Cook for 5 minutes.
Add the fish sauce, lime juice, and brown sugar to the pan. Mix well to incorporate the flavors.
Bring to a simmer and let cook.
Remove the curry from the heat and garnish with fresh basil leaves.
Serve the Red Curry over steamed rice and enjoy!
