Easy Fluffy Moist Lemon Yoghurt Cake

Ingredients
For the Cake:
- 1 Cup plain yoghurt
- 2 cups all-purpose flour
- 11⁄2 cups crystal sugar
- 3 large eggs
- 1⁄2 Cup vegetable oil
- 3 teaspoon baking powder
- 2 teaspoon vanilla extract
- Zest of one lemon
For the Glaze:
- 1⁄2 Cup powdered sugar
- 3 tablespoon lemon juice

Directions
Preheat your oven to 350°F (180°C). Grease a 9-inch round cake pan and line it with parchment paper.
In a large bowl, combine the yoghurt, eggs, sugar, vanilla extract, and vegetable oil. Mix them using a whisk until they're well combined.
Add the lemon zest to the mixture and stir.
In a separate bowl, combine the flour and baking powder.
Gradually add the dry ingredients to the wet mixture and mix until the batter is smooth and well combined.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
While the cake is baking, prepare the glaze by mixing the powdered sugar and lemon juice until smooth.
Once the cake is done, let it cool in the pan for 10 minutes, then remove and transfer to a wire rack.
Drizzle the glaze over the warm cake and let it dry.
