- 1 tablespoon olive oil
- 1 onion
- 2 carrots
- 1 stalk celery chopped
- 1 zucchini
- 1 can diced tomatoes
- 1 can chickpeas drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon dried basil
- salt and pepper to taste

Directions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until soft and golden brown, about 5-7 minutes.
Add the minced garlic and cook for an additional minute, stirring occasionally.
Add the chopped carrots, celery, and zucchini to the pot, and stir to combine.
Add in the diced tomatoes, chickpeas, and vegetable broth. Stir well and bring to a boil.
Reduce heat low and let simmer for 20-25 minutes, or until vegetables are tender.
Stir in dried basil, salt, and pepper to taste.
