Easy Indian Eggplant Curry
This delicious eggplant curry is a vegetarian dish that is perfect for a healthy and flavorful meal. The combined spices and vegetables create a savory filling dish that's easy to make.
Ingredients
- 2 Eggplants
- 2 tablespoon vegetable oil
- 1 teaspoon of cumin seeds
- 1 onion
- 2 cloves garlic, minced
- 1 a piece of ginger, grated
- 2 tomatoes
- 1 teaspoon of coriander
- 1 teaspoon of ground cumin
- 1⁄2 teaspoon of turmeric powder
- 1⁄2 teaspoon of red chilli powder
- salt to taste
- 1⁄2 Cup of plain yogurt
- Fresh cilantro leaves, chopped for garnish

Directions
Heat the oil in a large skillet over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped onion and sauté until it becomes soft and translucent.
Add the minced garlic and grated ginger, and saute.
Add the chopped tomatoes and sauté until they become soft and pulpy.
Add the ground coriander, cumin, turmeric, red chilli powder, and salt to taste, stir well and cook for 2-3 minutes.
Add the chopped eggplants and mix well with the spice mixture.
Add to the skillet and let it cook for 10-15 minutes or until the eggplants are tender.
Once the eggplants are cooked, add the yogurt and mix.
Cook for another 2-3 minutes before turning off the heat. Garnish with cilantro leaves and serve hot with rice or naan bread.
