Easy Moist White Chocolate Mud Cake

- 200 g white chocolate, chopped
- 1 Cup milk
- 2 cups all-purpose flour
- 2 cups crystal sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract

Preheat your oven to 325°F (160°C) and grease a 9-inch round cake pan.
In a saucepan, melt the butter, white chocolate, and milk over low heat. Stir continuously until smooth. Remove from heat and let it cool slightly.
In a separate mixing bowl, combine flour, sugar, baking powder, and salt. Mix well.
Add the chocolate mixture to the dry ingredients. Stir until fully combined and smooth.
Beat the eggs and vanilla extract in a small bowl, then add them to the batter. Mix until well incorporated.
Pour the batter into the greased cake pan and top with a spatula.
Bake for about 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
While the cake is cooling, prepare the white chocolate ganache. Place 200 g chopped white chocolate in a heatproof bowl.
In a small saucepan, heat 1/2 cup heavy cream until it starts to simmer. Pour the hot cream over the chopped white chocolate and let it sit for a minute.
Stir the mixture until the white chocolate is completely melted and 10 minutes.
Place the cooled cake on a plate and pour the ganache ove, allowing it to drip down the sides for an elegant look.
Optional: Decorate the cake with white chocolate curls and fresh berries for an extra touch of beauty.
