Easy Old-Fashioned Vanilla Custard Slice
Indulge in layers of creamy custard sandwiched between crispy puff pastry with this classic Vanilla Slice recipe. This dessert is perfect for afternoon tea or a sweet treat after dinner.
Ingredients
Pastry:
- 2 letters of frozen puff pastry, thawed
Custard Filling:
- 1 Cup milk
- 1 Cup heavy cream
- 1⁄2 Cup crystal sugar
- 1⁄4 Cup maize starch
- 4 egg Yolks
- 1 teaspoon vanilla extract
Vanilla Glaze:
- 1 Cup of icing sugar (powdered sugar)
- 2 tbls boiling water
- 1⁄2 teaspoon vanilla extract

Directions
Preheat your oven to 180°C (350°F).
Line a baking dish with one sheet of puff pastry. Use a fork to prick holes all over the pastry. This will prevent it from puffing up too much during. Dust the pastry with icing sugar.
Bake the pastry for 15-20 minutes or until it turns golden brown and crispy. Remove from the oven and aside to cool.
In a saucepan, heat the milk and heavy cream over medium heat until it starts to simmer. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until well combined.
Gradually pour the hot milk into the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
Remove the custard from heat and stir in the vanilla extract. Allow it to cool slightly.
Pour the custard over the cooled pastry and spread it evenly.
Place the second sheet of puff pastry over the custard. Press it down gently.
Refrigerate the vanilla slice for 2-3 hours or until the custard is set.
In a bowl, mix together the icing sugar, boiling water, and extract to make the glaze. Drizzle it over the chilled custard layer.
Return the vanilla slice to the refrigerator for another 15-30 minutes to allow the glaze to set.
Once completely set, slice the dessert into squares or rectangles and serve chilled.
