Easy Savoury Toast Bake with Tomatoes, Cheese, & Herbs
A delightful morning or evening snack, this savoury toast recipe combines a rich array of flavors and wholesome ingredients. Ingredients
- 8 slices of whole grain bread
- 4 tbls of olive oil
- 2 ripe tomatoes
- 1 large red onion
- 1 paprika
- 2 cloves of garlic (minced)
- 1 teaspoon of dried oregano
- 1⁄2 teaspoon of red chili flakes
- salt to taste
- Black pepper to taste
- 1 Cup of shredded mozzarella cheese
- Fresh basil for garnishing

Directions
Preheat the oven to 180°C (350°F).
Thinly slice the tomatoes, onion, and bell pepper.
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the onions, bell pepper, and garlic. Sauté until they are softened and slightly caramelized.
Take the pan off the heat and mix in the dried oregano, chili flakes, salt, and pepper.
Arrange the bread slices on a baking tray and brush them with the rest of the olive oil.
Spread the sautéed vegetables evenly on each bread slice. Now, lay the sliced tomatoes on top.
Sprinkle the shredded mozzarella over the vegetables and tomatoes.
Place the tray in the oven and bake for 8-10 minutes, or until the cheese has melted and is golden brown.
