Fluffy Berry & Cream Cloud Cake

Ingredients
- 6 large eggs, separated
- 1 Cup crystal sugar
- 1⁄2 Cup Cake flour
- 1⁄4 Cup water
- 1⁄4 Cup vegetable oil
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cream of tartar
- 1⁄2 teaspoon salt
- 1 Cup whipping cream
- 2 tbls confectionery sugar
- Fresh fruits of your choice for topping

Directions
Preheat your oven to 325°F (165°C).
In a bowl, mix together egg yolks, 1/2 cup sugar, water, vegetable oil, and vanilla extract.
Sift cake flour into the yolk mixture and mix well until it becomes smooth.
In another bowl, beat egg whites with cream of tartar and salt until it forms soft peaks.
Gradually add 1/2 cup of sugar and continue to beat until stiff peaks form.
Gently fold 1/3 of the egg whites into the yolk mixture.
Gradually incorporate the remaining egg whites into the yolk mixture.
Pour the batter into an ungreased tube or bundt pan.
Bake for about 60-70 minutes or until an inserted toothpick comes out clean.
Once cooked, carefully overturn the pan and allow it to cool completely.
While the cake is cooling, prepare the whipped cream. Beat the whipping cream with powdered sugar until thick and then place into a piping bag.
Once the cake cools, remove from the pan and top it with the whipped cream.
Garnish the cake with fresh fruits of your choice and serve.
