Ingredients
- 1 Package of ready-to-cook gnocchi
- 1 Cup of chopped sundried tomatoes
- 1 Cup of halved cherry tomatoes
- 1 Cup of diced cucumber
- 1⁄2 Cup of pitted Kalamata olives
- 1⁄2 Cup of chopped red onion
- 1⁄4 Cup of chopped fresh basil leaves
- 1⁄4 Cup of chopped fresh parsley
- 1⁄2 Cup of crumbled feta cheese
- 1⁄4 Cup of olive oil
- 3 tbls of lemon juice
- 2 cloves garlic, minced
- 1 teaspoon of dried oregano
- salt and pepper to taste

Directions
Cook the gnocchi according to package directions, then drain and rinse under cold water until cooled.
In a large bowl mix together the cooked gnocchi, sundried tomatoes, cherry tomatoes, cucumber, Kalamata olives, and red onion.
To make the dressing, in a small bowl whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
Pour the dressing over the gnocchi mixture and toss everything together thoroughly, ensuring that the ingredients are well mixed.
