Healthy Cheesy Veggie Cauliflower Nachos
A healthier and delicious take on traditional nachos, this recipe for cauliflower nachos substitutes the classic corn chips with low-carb, nutrient-packed cauliflower. Topped with melted cheese, fresh veggies, and a dollop of sour cream, these nachos make a great appetizer or game-day snack.
Ingredients
- 1 large head of cauliflower, cut into bite-size florets
- 3 tbls olive oil
- salt and pepper to taste
- 1 Cup shredded cheddar cheese
- 1⁄2 Cup diced tomatoes
- 1⁄2 Cup diced red onion
- 1⁄4 Cup sliced Jalapeños
- 1⁄4 Cup black olives, sliced
- 1⁄4 Cup chopped Cilantro
- 1⁄2 Cup sour cream
- 1⁄2 Cup guacamole

Directions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Arrange the cauliflower florets on the baking sheet, then drizzle with olive oil, and season with salt and pepper. Toss well to ensure the florets are evenly coated.
Roast the cauliflower in the preheated oven for about 15 minutes, until they begin to brown and are crispy around the edges.
Remove the baking sheet from the oven. Sprinkle the shredded cheese over the cauliflower, then return to the oven and cook for another 5 minutes, or until the cheese is melted and bubbly.
While the cheese is melting, dice the tomatoes, red onion, and jalapeños, slice the black olives, and chop the cilantro.
Once the cheese is melted, remove from the oven and top the cauliflower with the diced veggies, sliced olives, and chopped cilantro.
Drizzle the sour cream and guacamole over the toppings, then serve immediately, while still warm.
