  • 1 Cup of pitted dates Added to
  • 1 Cup of boiling water Added to
  • 1 Cup of wholemeal flour Added to
  • 2 tbls of Cocoa Added to
  • Cup of desiccated coconut Added to
  • 12 Cup of extra virgin olive oil Added to
  • 2 tbls of honey Added to
  • 1 teaspoon of Vanilla Extract Added to

1. Step

Preheat the oven to 180C degrees. Line a 18x28cm slice tray with baking paper, make sure to extend paper at the sides for easy lifting.

2. Step

Soak the dates in boiling water for 10 minutes until they become soft.

3. Step

Add the softened dates into a blender together with the soaking water, blend until you achieve a smooth consistency.

4. Step

In a large bowl, crush the Weetbix, add in flour, cocoa, and desiccated coconut. Stir to combine.

5. Step

Pour olive oil, honey, vanilla extract, and the date mixture into the large bowl with the rest of the ingredients. Stir until the mixture is fully combined.

6. Step

Spread the mixture on the prepared baking tray, pressing it down until firm.

7. Step

Bake for 20 - 25 minutes or until the slice is firm to touch.

8. Step

Remove from the oven and let it cool in the tray. Once cooled, lift the baking paper from the tray and cut the slice into 12 pieces.
