- 2 Stems celery, sliced

- 2 teaspoons dried basil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1 Cup uncooked pasta (optional)
- Fresh parsley, chopped for garnish

In a slow cooker, combine chicken broth, diced tomatoes, carrots, celery, garlic, dried basil, thyme, salt, and black pepper. Stir well.
Add chicken breasts to the slow cooker and stir to cover with the broth mixture.
Cover the slow cooker and cook on high for 4-5 hours or low for 8-10 hours.
Remove cooked chicken breasts from the slow cooker and shred using two forks.
Return the shredded chicken to the slow cooker and add pasta (if using). Stir well.
Cover the slow-cooker and cook on high for another 30 minutes or until pasta is cooked.
Serve hot, garnished with chopped parsley.
