Home-made potato soup with wiener
This potato soup with wiener is one of my absolute favorite dishes, especially in the cold season. Nothing warms you up from the inside better than a steaming bowl of this soup. It is easy to prepare and not only tastes sensationally good, but also provides the body with valuable nutrients. Served with hearty wieners, it is a real filling dish.
Ingredients
- 500 g Potatoes
- 2 carrots
- 2 Rods leek
- 1 onion
- 2 l vegetable stock cube
- 4 Vienna sausages
- 1 tbsp butter
- Salt, pepper
- 1 TL nutmeg
- Parsley to garnish

Directions
To make the potato soup recipe with wiener, first peel the potatoes and carrots and cut them into small pieces together with the leek. I recommend leaving the potatoes a little coarser for a more intense flavor.
Then finely chop the onion and sauté in a large pan with the butter until translucent. I have found that sautéing the onion provides a nice, sweet note.
Now add the prepared vegetables and sauté for a few minutes to allow the flavors to develop.
Then pour in the vegetable stock and leave the soup to simmer for approx. 30 minutes. Stir from time to time so that nothing sticks to the bottom of the pot.
In the meantime, you can slice the Vienna sausages and fry them lightly in a pan.
When the vegetables in the soup are cooked until soft, puree them to the desired consistency. I personally like it when there are still a few chunks in it.
Finally, season to taste with salt, pepper and nutmeg and stir in the chopped Vienna sausage.
Garnish the potato soup with wiener with a little parsley before serving.
