Homemade cookies filled with jam
This recipe is the result of many years of biscuit-loving in my family. The combination of buttery dough and sweet jam is simply irresistible. Having baked these cookies countless times for different occasions, I can assure you that they are always a hit and quickly disappear from the plate.
Ingredients
- 200 g softened butter
- 100 g confectionery sugar
- 1 egg
- 1 Pinch salt
- Vanilla extract to taste
- 350 g flour
- 1⁄2 Teaspoon baking soda
- 200 g Jam of your choice

To bake the jam cookies, preheat the oven to 180°C top/bottom heat. Line a baking tray with baking paper. This ensures that the cookies do not stick to the tray and can be easily removed after baking.
Beat the soft butter with the powdered sugar in a large bowl until fluffy. The best way to do this is with a hand mixer. In my experience, the batter will be particularly fluffy if you really take your time here and mix the butter and sugar mixture for at least five minutes.
Then add the egg, a pinch of salt and the vanilla extract and continue stirring until everything is well combined.
In a separate bowl, mix the flour with the baking powder. Gradually add these dry ingredients to the butter mixture and work everything into a smooth dough. If the dough is too sticky, simply add a little more flour.
Wrap the dough in cling film and leave to rest in the fridge for approx. 20 minutes. This step makes the dough easier to work with later.
After the chilling time, roll out the dough between two pieces of baking paper. Cut out cookies with a round cookie cutter and place on the prepared baking tray.
Cut a center out of half of the cookies using a smaller cutter. This will later create the classic look of cookies with jam filling.
Bake the cookies in the preheated oven for approx. 10-12 minutes until they are lightly golden brown.
Leave the jam cookies to cool completely. Then spread jam on the cookies without a hole and place a cookie with a hole on top.
