Homemade Creamy Potato Gem Oven Bake
This scrumptious, easy-to-prepare dish uses potato gems to create a wonderfully hearty meal for any time of the day. Each bite delivers a delightful crunch from the gems followed by the warm, oozing cheese and aromatic herbs. Ingredients
- 800 gms of frozen potato gems
- 2 cups of grated cheddar cheese
- 1 finely chopped medium onion
- 4 strips of bacon, diced
- 1 red bell pepper, diced
- 1 Cup of sour cream
- salt and pepper to taste
- 1 tablespoon of olive oil
- Chopped parsley for garnish

Directions
Preheat your oven to 200°C (180°C for fan-forced).
In a pan, heat the olive oil over medium heat. Add the diced bacon and onions, sauté until onions are soft and bacon is slightly crispy.
Add the diced red pepper to the pan, cook for a further 2 minutes. Remove from heat and set aside.
Layer half the potato gems at the bottom of a greased baking dish.
Sprinkle half the cheese over the top, then layer on your cooked bacon, onions, and red pepper.
Layer the rest of the potato gems over the top, then sprinkle over the remaining cheese. Season with salt and pepper to taste.
Bake for 20-25 minutes, or until cheese is melted and potato gems are golden and crispy.
Let it cool for a few minutes then spread sour cream over the top. Garnish with chopped parsley, if desired. It's now ready to serve!
