Homemade Gnocchi with Spinach
A quick and tasty dinner or lunch
Ingredients
Gnocchi
- 220 g boiled potatoes
- 1 yolk
- 50 g semi-coarse flour
Sauce
- 150 g chicken meat
- 1⁄2 a piece onion
- 2 handfuls spinach leaves
- 70 dl cooking cream
- olive oil
- ground black pepper
- ground Grater

Directions
Boil the potatoes in their skins until soft and let them cool down.
Clean the cooled potatoes and prick them with a fork.
Add the yolk, stir.
Let's start adding flour, with our hands we create non-sticky dough.
Often we divide the dough into 3 parts and make a roll from each part.
Cut the rolls into smaller pieces, run a fork over them.
We put the gnocchi into boiling water, when they float to the surface we boil them for 1 minute and then remove from heat.
Drain and rinse.
Saute the onion until transparent in oil.
Add the chopped meat and spices.
Stir, pour water over and simmer.
Add 1 handful of spinach and simmer until soft.
Put the second handful of spinach into the blender, add cream and blend.
Pour over the meat, let it come to a boil and then remove from heat.
We pour over the gnocchi and serve.
Instead of gnocchi, you can choose other pasta or even rice.
