Homemade spices for Christmas pastries
It's that time of year again when the smell of freshly baked goods fills the house. The smell of freshly baked stollen in particular is unmistakable and inextricably linked with Christmas. A key aspect of this delicious smell and taste is the right spice. Over the years, I've learned that the perfect stollen spice is actually quite easy to make yourself. Here is my tried and tested recipe.
Ingredients
- 2 tbsp cinnamon
- 1 tbsp cardamom
- 1 tbsp nutmeg
- 1 tbsp anise
- 1 tbsp Cloves
- 1⁄2 tbsp coriander

To mix Stollen spice, make sure that all the spices are dry. The aroma is more intense if you grind the spices yourself. The cloves and cardamom in particular only develop their full flavor when freshly ground.
Now mix all the ingredients in a medium-sized bowl. Some prefer their Stollen spice stronger, others milder. The great thing about making your own is that you can vary the intensity of the spices to suit your taste. I personally love it when the cinnamon flavor is dominant, for example.
After mixing, it is important that you place the Stollen spice in an airtight container. This is the only way to preserve the aroma.
