Directions
In a bowl, mix the flour and salt. Make a well in the center and add the warm water and egg. Mix with a fork until turns into a dough.
Move to a floured surface and knead it for 5 minutes until elastic. Place the dough in a bowl, and let rise for 30 minutes.
In the meantime, prepare the filling. Heat butter in a skillet on medium heat. Saute the onion until translucent. Remove from heat and combine with mashed potatoes and grated cheese. Season with salt and pepper to taste.
Roll out the dough until it's about 1/8 inch thick. Use a round cookie cutter or glass to cut out circles from the dough.
Place a spoonful of the potato-cheese filling onto the center of each dough. Fold the circle in half, pressing the edges together. You can crimp them with a fork for a decorative touch.
Bring a large pot of salted water to boil. Drop the pierogi into the boiling water and cook for about 3-4 minutes, or until they rise to the surface. Transfer to a plate.
If desired, you can now pan-fry the boiled pierogi for added crispiness. Heat oil in a skillet over medium heat and add the pierogi. Cook till brown on all sides.
Serve the pierogi hot with a dollop of sour cream on top. Enjoy!
