Directions
Preheat the oven to 180°C and prepare a baking sheet with baking paper. This will prevent the cookies from sticking to the tray and make it easier to transfer them once baked.
In a large bowl, mix together the flour, baking soda, salt, cinnamon and cloves. It is important to make sure these dry ingredients are well combined to ensure even distribution of flavor in the cookies.
In another bowl, cream the butter and brown sugar until smooth and thick. I recommend using room temperature butter to make this process easier.
Add the egg to the butter mixture and beat until fully integrated.
Add the honey slowly while continuing to mix. I suggest using good quality honey to give the best flavor to your cookies.
Combine the flour mixture with the butter mixture, incorporating it little by little to avoid lumps.
Once the dough is ready, make small balls and place them on the baking sheet. Remember to leave enough space between each one as they will expand during baking.
Bake for 10-12 minutes or until cookies are golden brown. Be careful not to overbake, as the cookies will continue to harden as they cool.
Let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Sprinkle with powdered sugar for a festive touch.
