How to cook Healthy Coconut Carrot Slice

- 1 Cup of brown sugar
- 1 Cup of desiccated coconut
- 1⁄2 Cup of crushed walnuts
- 1⁄2 Cup of vegetable oil
- 3 large eggs
- 1 teaspoon of Vanilla Extract
- 1 teaspoon of cinnamon powder

Directions
Preheat your oven to 180°C (356°F) and line a rectangular baking tray with parchment paper.
In a large mixing bowl, combine the flour, sugar, desiccated coconut, crushed walnuts, cinnamon powder, and a pinch of salt.
Add the grated carrot to the mixture and mix well until the carrots are evenly distributed.
In another bowl, beat the eggs lightly. Then add the vegetable oil and vanilla extract, and mix until well combined.
Pour this wet mixture into the dry ingredients and mix until well combined.
Transfer your carrot mixture to your lined baking tray, smooth the surface, and place it in your preheated oven.
