Directions
Mix the wheat, barley, millet, green lentils, and the three types of beans in a large bowl.
Grind the mixed ingredients in a flour mill until it achieves the consistency of whole grain flour. You can also use a high-performance blender for this.
In another large bowl, mix 2 cups of the freshly ground flour with the spelt flour.
In a small dish, mix the yeast with a little warm water to activate it.
Add the activated yeast, warm water, honey, olive oil, and salt into the bowl with the combined flours. Stir thoroughly until you obtain a consistent dough.
Cover the dough with a damp cloth and let it sit in a warm place for about an hour for the dough to rise.
After an hour, you'll see that the dough has approximately doubled in size. Stir the dough once more then put it into a greased loaf pan.
Allow the dough to rise again in the loaf pan for about 30-60 minutes.
Preheat oven to 350 Fahrenheit (175 Celsius).
Slide the loaf in the oven and bake for about 50 minutes.
Check the bread; the top should be nicely browned and the bread should make a hollow sound when you tap on it.
Let the bread cool before slicing.
