How to make Creepy Edible Halloween Eyeballs
Nothing brings out the spirit of Halloween quite like the eerie sight of edible eyeballs staring back at you. Be prepared for a delightful squeal of horror from your guests when presented with these spooky treats.
Ingredients
- 10 hard-boiled eggs
- 20 green olives stuffed with pimentos
- 1⁄4 Cup mayonnaise
- 1 teaspoon mustard
- 1 tablespoon fresh chives, chopped
- salt and pepper to taste
- red food coloring
- A few toothpicks

Hard-boil 10 eggs. After they've cooled, peel them. I suggest cooling the boiled eggs in ice water which makes the peeling process much easier and quicker.
Cut the peeled eggs in half lengthwise and carefully scoop out the yolks, preserving the whites. Both ingredients will be used further so nothing should go to waste.
In a mixing bowl, combine egg yolks, mayonnaise, mustard, chives, salt and pepper. Mix until you have a smooth paste. I recommend adding salt and pepper gradually and tasting as you go to get your perfect seasoning level.
In your halved egg whites, add back the yolk mixture, dividing it evenly to create the eyeballs.
Press a green olive into each filled egg half, pimento side up, giving the appearance of an iris and pupil.
For a really spooky element, use a toothpick dipped in red food coloring to draw bloodshot lines on the egg white around the olives. Keep it random so it looks more natural and scarier.
Lastly, refrigerate before serving and let them chill for about an hour. This helps firm up everything and brings out the flavors more.
