1. Step

Start by combining the gelatin and 1/2 cup of cold water in a large mixing bowl. Let it sit while you prepare the sugar solution. By allowing the gelatin to bloom, you ensure a softer texture in your final product.

2. Step

Combine granulated sugar and 1 cup water in a saucepan over medium heat. Stir until the sugar is entirely dissolved. Don't be tempted to rush this step; patience is critical to achieving the perfect texture.

Bring the sugar solution to a boil and let it simmer for about 15 minutes. Be sure to control your heat as the solution can boil over if not monitored.

Once the sugar solution is ready, carefully pour it over the gelatin and begin to beat it on low speed with an electric mixer.
