How to make Good Healthy Cauliflower Fried Rice

Ingredients
- 1 large head cauliflower
- 2 tbls sesame oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 Cup frozen peas
- 21⁄2 tbls low-sodium soy sauce
- 2 eggs, lightly beaten
- 2 tbls chopped green onions
- salt and pepper to taste

Directions
Remove the stems and leaves from your cauliflower, and chop it into chunks.
Place these chunks in a food processor and pulse until it looks like rice. Make sure not to over-process, you don't want mush.
Preheat a large skillet or wok over medium heat, and then add sesame oil.
Add the garlic, onions, carrots, and peas to the skillet, and cook until they're tender.
Slide the veggies to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs and mix them in with the vegetables.
Stir in cauliflower, soy sauce, green onions, salt, and pepper.
Cook until heated through and then you're ready to serve.
